Ingredients:

½ cup bulgur wheat
½ cup diced tomatoes
¼ cup diced cucumber
2 tablespoons chopped parsley
2 tablespoons chopped mint leaves
1 tablespoon olive oil
1 tablespoon lemon juice
Salt and pepper to taste

Cooking Instructions:

In a medium bowl, combine the bulgur wheat with 1 cup of boiling water. Cover the bowl and let it sit for 10 minutes until the bulgur wheat is tender.
Drain any excess water from the bulgur wheat and transfer it to a large bowl.
Add the diced tomatoes, cucumber, parsley, mint leaves, olive oil, lemon juice, salt and pepper to the bowl with the bulgur wheat and mix everything together until combined.
Serve immediately or refrigerate for up to 3 days.
