One-Serving Lebanese Falafel

This one-serving Lebanese Falafel recipe is perfect for a quick vegan meal that’s packed with flavor and nutrition! Ingredients:

1 cup of dried chickpeas, soaked overnight in cold water
2 cloves of garlic, minced
1 small onion, finely chopped
2 tablespoons of fresh parsley, finely chopped
2 tablespoons of fresh cilantro, finely chopped
1 teaspoon of ground cumin
1 teaspoon of ground coriander
½ teaspoon of baking powder
Salt and pepper to taste
Vegetable oil for frying

Cooking Instructions:

Drain the soaked chickpeas and place them in a food processor. Pulse until the chickpeas are coarsely ground. Transfer the mixture to a bowl.
Add the garlic, onion, parsley, cilantro, cumin, coriander, baking powder and salt and pepper to the bowl with the chickpeas. Mix everything together until it forms a thick paste.
Heat enough vegetable oil in a deep skillet over medium heat to cover the falafel balls when frying.
Scoop out about 2 tablespoons of falafel mixture at a time and shape into balls using your hands or an ice cream scoop. Carefully drop each ball into the hot oil and fry for about 3 minutes on each side until golden brown and crispy on the outside.
Remove from heat and drain on paper towels before serving with your favorite accompaniments such as hummus or tahini sauce! Enjoy!
