Ingredients:

2 tablespoons olive oil
1/2 cup diced onion
1/2 cup diced bell pepper (any color)
1/2 cup diced celery
2 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon dried oregano
1/2 teaspoon cayenne pepper (optional)
1/4 teaspoon ground black pepper
2 tablespoons tomato paste
3/4 cup chicken broth or vegetable broth
3/4 cup uncooked penne pasta
1/2 cup cooked shrimp or chicken (optional)

Cooking Instructions:

Heat the olive oil in a large skillet over medium heat. Add the onion, bell pepper, celery and garlic and cook until softened, about 5 minutes.
Add the smoked paprika, oregano, cayenne pepper and black pepper and stir to combine. Cook for another minute until fragrant.
Add the tomato paste and stir to combine. Cook for another minute until fragrant.
Add the chicken broth and bring to a simmer. Add the penne pasta and cook for 8-10 minutes until al dente. If using shrimp or chicken add it now as well.
Taste for seasoning and adjust if necessary with salt or more spices as desired. Serve hot with your favorite toppings such as cheese or fresh herbs if desired!
