Ingredients:

1 tablespoon vegetable oil
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground turmeric
½ teaspoon ground ginger
¼ teaspoon cayenne pepper (or more to taste)
½ cup tomato puree
¼ cup water
2 tablespoons white vinegar

Cooking Instructions:

Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the cumin, coriander, turmeric, ginger and cayenne pepper and cook for 1 minute more.
Add the tomato puree and water and bring to a simmer. Simmer for 10 minutes or until thickened slightly.
Stir in the vinegar and season with salt to taste. Simmer for 5 minutes more or until desired consistency is reached. Serve hot over cooked rice or with naan bread if desired.
