Ingredients:

1 tablespoon vegetable oil
1 teaspoon cumin seeds
1 teaspoon mustard seeds
2 cloves garlic, minced
1 teaspoon ground ginger
1 teaspoon ground coriander
1/2 teaspoon ground turmeric
1/4 teaspoon cayenne pepper
1/4 cup tomato puree
2 tablespoons white vinegar
2 tablespoons brown sugar
Salt to taste
1 small potato, diced into 1/2 inch cubes
3 ounces protein of choice (chicken, beef, pork or tofu)

Cooking Instructions:

Heat the oil in a large skillet over medium heat. Add the cumin and mustard seeds and cook until they begin to sizzle. Add the garlic and cook for 1 minute. Add the ginger, coriander, turmeric and cayenne pepper and cook for another minute.
Add the tomato puree, vinegar and brown sugar to the skillet and stir to combine. Season with salt to taste. Simmer for 5 minutes until thickened slightly.
Add the potato cubes to the skillet and stir to combine. Cover and cook for 10 minutes until potatoes are tender.
Add the protein of choice to the skillet and stir to combine. Cover and cook for an additional 5 minutes until protein is cooked through. 5
