Ingredients:

1 cup basmati rice
1/2 cup mixed vegetables (carrots, peas, beans)
1/4 cup spinach leaves, chopped
2 tablespoons vegetable oil or ghee
1 teaspoon cumin seeds
2 cloves garlic, minced
1 teaspoon ginger paste or grated ginger root
1/2 teaspoon turmeric powder
1/2 teaspoon garam masala powder
Salt to taste

Cooking Instructions:

Wash the basmati rice and soak it in water for 15 minutes. Drain the water and set aside.
Heat the oil or ghee in a pan over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
Add the garlic and ginger paste and sauté for a minute until fragrant.
Add the mixed vegetables and sauté for 3-4 minutes until they are lightly cooked but still crunchy.
Add the spinach leaves and sauté for another minute until wilted.
Add the turmeric powder, garam masala powder, salt to taste and mix well to combine all of the ingredients together.
Add the drained basmati rice to the pan and mix everything together gently so that all of the ingredients are evenly distributed throughout the rice mixture.
Cover with a lid and cook over low heat for 15 minutes or until all of the liquid has been absorbed by the rice mixture and it is cooked through completely. Remove from heat and let it sit covered for 5 minutes before serving hot with your favorite accompaniments such as raita or chutney!
