Ingredients:

1 cup basmati rice
1 tablespoon vegetable oil
1 teaspoon cumin seeds
½ teaspoon turmeric powder
½ teaspoon garam masala powder
¼ teaspoon red chili powder (optional)
2 cloves garlic, minced
1 small onion, chopped
½ cup mixed vegetables (carrots, peas, beans etc.)
2 tablespoons chopped fresh cilantro leaves
Salt to taste

Cooking Instructions:

Wash the basmati rice and soak it in water for 15 minutes. Drain the water and set aside.
Heat the oil in a pan over medium heat. Add the cumin seeds and let them sizzle for a few seconds. Add the turmeric powder, garam masala powder and red chili powder (if using). Stir for a few seconds until fragrant.
Add the garlic and onion and sauté until they are lightly browned. Add the mixed vegetables and sauté for another 2-3 minutes until they are cooked through but still crunchy.
Add the drained basmati rice to the pan and stir to combine all of the ingredients together. Cover with a lid and cook over low heat for 15-20 minutes or until all of the liquid has been absorbed by the rice. Turn off the heat and let it sit covered for 5 minutes before serving.
Garnish with fresh cilantro leaves before serving hot with your favorite accompaniment such as raita or chutney!
