Ingredients:

1 cup basmati rice
1/2 cup paneer cubes
1/2 cup mixed vegetables (carrots, peas, beans)
2 tablespoons oil or ghee
2 cloves garlic, minced
1 teaspoon cumin seeds
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1/4 teaspoon red chili powder (optional)
2 green chilies, chopped (optional)
2 tablespoons chopped fresh cilantro leaves
Salt to taste

Cooking Instructions:

Wash the basmati rice and soak it in water for 10 minutes. Drain the water and set aside.
Heat the oil or ghee in a pan over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
Add the garlic and sauté for a minute until fragrant. Then add the mixed vegetables and sauté for another 3-4 minutes until they are lightly cooked but still crunchy.
Add the paneer cubes and sauté for another minute until they are lightly browned on all sides.
Add the spices – coriander powder, turmeric powder, red chili powder (optional), green chilies (optional), salt to taste – and mix well to combine all the ingredients together. Cook for another minute until all the spices are well blended into the mixture.
Add the drained basmati rice to the pan and mix everything together gently but thoroughly so that all ingredients are evenly distributed throughout the rice mixture. Cover with a lid and cook over low heat for about 20 minutes or until all liquid has been absorbed by the rice and it is cooked through but still fluffy and not mushy or overcooked.
Once done, turn off heat and fluff up with a fork before serving hot garnished with fresh cilantro leaves on top! Enjoy!
