Ingredients:

1 cup basmati rice
1/2 cup broccoli florets
1/4 cup diced onion
1/4 cup diced carrots
2 tablespoons vegetable oil
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground coriander powder
1/2 teaspoon turmeric powder

Cooking Instructions:

Begin by washing the basmati rice in cold water until the water runs clear. Then soak the rice in cold water for 15 minutes.
Heat the vegetable oil in a large pot over medium heat. Add the onions and carrots and sauté for 3-4 minutes until softened.
Add the garlic, cumin, coriander powder and turmeric powder to the pot and stir to combine. Cook for another minute until fragrant.
Add the broccoli florets to the pot and stir to combine with the other ingredients. Cook for another 3-4 minutes until softened slightly.
Drain the soaked basmati rice and add it to the pot with 2 cups of water or vegetable broth (or enough liquid to cover all of the ingredients). Bring to a boil then reduce heat to low, cover with a lid and simmer for 15 minutes or until all of the liquid has been absorbed by the rice and vegetables are cooked through.
Serve hot with your favorite accompaniments such as raita or chutney! Enjoy!
