Ingredients:

1 cup basmati rice
2 tablespoons vegetable oil
1 teaspoon cumin seeds
1 onion, finely chopped
2 cloves garlic, minced
1 teaspoon ginger paste or grated ginger root
1 teaspoon ground coriander powder
½ teaspoon ground turmeric powder
½ teaspoon garam masala powder
½ cup frozen peas
¼ cup cashew nuts, chopped

Cooking Instructions:

Rinse the basmati rice in cold water until the water runs clear. Soak the rice for 10 minutes in cold water and then drain. Set aside.
Heat the oil in a large saucepan over medium heat. Add the cumin seeds and fry for 30 seconds until fragrant. Add the onion and fry for 5 minutes until softened and lightly golden brown. Add the garlic and ginger paste or grated ginger root and fry for another minute until fragrant.
Add the ground coriander powder, turmeric powder, garam masala powder, frozen peas and cashew nuts to the pan and stir to combine all of the ingredients together. Fry for another minute before adding in the drained basmati rice. Stir to combine all of the ingredients together before adding 2 cups of hot water to the pan.
Bring to a boil over high heat before reducing to low heat and simmering for 15 minutes or until all of the liquid has been absorbed by the rice and it is cooked through. Fluff up with a fork before serving hot with your favorite accompaniments such as raita or chutney!
