One-Serving Indian Chana Biryani

Ingredients:

1 cup basmati rice
1 cup cooked chickpeas (chana)
1 onion, finely chopped
2 cloves garlic, minced
1 teaspoon ginger paste or freshly grated ginger root
1 teaspoon cumin powder
1 teaspoon coriander powder
½ teaspoon turmeric powder
½ teaspoon garam masala powder
2 tablespoons vegetable oil
Salt to taste

Cooking Instructions:

Soak the basmati rice in water for 30 minutes. Drain and set aside.
Heat the oil in a large pan over medium heat and add the chopped onion. Fry until golden brown and then add the garlic and ginger paste or grated ginger root. Fry for another minute until fragrant.
Add the cumin powder, coriander powder, turmeric powder and garam masala powder to the pan and fry for another minute until fragrant.
Add the cooked chickpeas (chana) to the pan and mix well with all of the spices and onions until everything is evenly combined.
Add the drained basmati rice to the pan along with 2 cups of water and salt to taste. Stir everything together until combined then cover with a lid and reduce heat to low-medium heat for 15 minutes or until all of the liquid has been absorbed by the rice and it is cooked through completely.
Once cooked through, turn off heat and let sit covered for 5 minutes before serving hot with your favorite accompaniments such as raita or chutney! Enjoy!
