Ingredients:

1/2 cup diced eggplant
1/4 cup tomato sauce
2 tablespoons grated parmesan cheese
2 tablespoons olive oil
1/4 teaspoon garlic powder
1/4 teaspoon dried oregano leaves
Salt and pepper to taste
2 ounces dry pasta of your choice (penne, spaghetti, etc.)

Cooking Instructions:

Heat the olive oil in a large skillet over medium heat. Add the diced eggplant and cook for 5 minutes until softened.
Add the tomato sauce, garlic powder, oregano leaves, salt and pepper to the skillet and stir to combine. Simmer for 5 minutes until the sauce has thickened slightly.
Meanwhile, bring a pot of salted water to a boil over high heat. Add the pasta and cook according to package instructions until al dente. Drain the pasta and add it to the skillet with the eggplant mixture. Stir to combine.
Sprinkle with parmesan cheese and serve immediately while hot!
