Ingredients:

1 tablespoon vegetable oil
1/2 onion, diced
2 cloves garlic, minced
1 teaspoon grated ginger root
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon garam masala powder
1/4 teaspoon cayenne pepper (optional)
2 tablespoons tomato paste
2 tablespoons plain yogurt
2 boneless skinless chicken breasts, cut into cubes
Salt and pepper to taste

Cooking Instructions:

Heat the oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and ginger and cook for another minute. Stir in the cumin, coriander, garam masala powder and cayenne pepper (if using). Cook for another minute.
Add the tomato paste and yogurt to the skillet and stir until combined. Add the chicken cubes to the skillet and season with salt and pepper to taste. Cook until chicken is cooked through, about 10 minutes.
