Ingredients:

2 slices of white bread
2 tablespoons of marinara sauce
2 ounces of cooked chicken breast, diced or shredded
1 ounce of mozzarella cheese, shredded or sliced thin
1 teaspoon of olive oil
Salt and pepper to taste

Cooking Instructions:

Preheat a skillet over medium heat. Add the olive oil to the skillet.
Add the chicken to the skillet and season with salt and pepper. Cook for 5 minutes until the chicken is cooked through.
Toast the bread in a toaster or on a griddle until lightly golden brown.
Spread the marinara sauce on both slices of toast. Top each slice with half of the cooked chicken and mozzarella cheese.
Place both slices together to form a sandwich and cook in the skillet for 3-4 minutes until cheese is melted and bread is golden brown on both sides. Serve immediately.
