Ingredients:

2 tablespoons vegetable oil
1 boneless skinless chicken breast, cut into thin strips
2 cloves garlic, minced
1/2 teaspoon ground ginger
2 tablespoons fish sauce
2 tablespoons soy sauce
2 tablespoons brown sugar
1/4 teaspoon red pepper flakes (optional)
2 tablespoons lime juice
3 ounces rice noodles
1/4 cup chopped peanuts
1/4 cup chopped fresh cilantro leaves

Cooking Instructions:

Heat the oil in a large skillet over medium heat. Add the chicken and cook until lightly browned and cooked through. Remove from the skillet and set aside.
Add the garlic and ginger to the skillet and cook for 30 seconds until fragrant. Add the fish sauce, soy sauce, brown sugar, red pepper flakes (if using), and lime juice to the skillet and stir to combine. Bring to a simmer for about 5 minutes until slightly thickened.
Add the noodles to the skillet and stir to combine with the sauce. Cook for about 5 minutes until noodles are tender.
Return chicken to skillet and stir to combine with noodles and sauce. Cook for an additional minute or two until everything is heated through.
Serve pad thai topped with peanuts and cilantro leaves as desired. Enjoy!
