Ingredients:

1 tablespoon vegetable oil
1 small onion, diced
1 garlic clove, minced
1 teaspoon ground cumin
½ teaspoon ground coriander
¼ teaspoon turmeric powder
¼ teaspoon chili powder (optional)
½ cup tomato puree or diced tomatoes
½ cup chicken broth or water
2 tablespoons plain yogurt
1 boneless skinless chicken breast, cut into cubes

Cooking Instructions:

Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the cumin, coriander, turmeric and chili powder (if using) and cook for another minute until fragrant.

Add the yogurt and stir to combine. Add the chicken cubes and simmer for another 10 minutes until cooked through. Taste for seasoning and adjust if necessary. Serve over rice or with naan bread if desired.
