Ingredients:

1 cup cooked chicken, diced
1 cup diced carrots
1 cup diced celery
1/2 cup diced onion
2 cloves garlic, minced
2 cups chicken broth or stock
1/2 teaspoon dried thyme leaves
Salt and pepper to taste

Cooking Instructions:

Heat a large pot over medium heat. Add the onion and garlic and cook for 3 minutes until softened.
Add the carrots, celery, thyme leaves, salt and pepper to the pot and cook for another 3 minutes.
Pour in the chicken broth or stock and bring to a boil. Reduce heat to low and simmer for 10 minutes until vegetables are tender.
Add the cooked chicken to the pot and simmer for an additional 5 minutes until heated through.
Serve hot with crusty bread or crackers if desired.
