Ingredients:

4 jumbo pasta shells
2 tablespoons olive oil
1/2 cup diced onion
1/2 cup diced bell pepper
1/2 cup diced mushrooms
1/2 cup cooked chicken breast, diced or shredded
2 cloves garlic, minced
1/4 teaspoon dried oregano
Salt and pepper to taste
1/4 cup heavy cream
2 tablespoons butter
2 tablespoons all
purpose flour
1/2 cup chicken broth
1/4 cup grated Parmesan cheese

Cooking Instructions:

Preheat oven to 375°F (190°C). Bring a large pot of salted water to a boil over high heat. Add the jumbo pasta shells and cook until al dente, about 8 minutes. Drain and set aside.
Heat the olive oil in a large skillet over medium heat. Add the onion, bell pepper, mushrooms, chicken breast, garlic, oregano, salt and pepper. Cook until vegetables are tender and chicken is cooked through about 5 minutes. Remove from heat and set aside.
In a small saucepan over medium heat melt the butter then whisk in the flour until combined. Slowly whisk in the heavy cream followed by the chicken broth until smooth and thickened about 3 minutes. Remove from heat then stir in Parmesan cheese until melted through sauce.
To assemble the stuffed shells spoon some of the vegetable mixture into each shell then top with some of the Alfredo sauce before placing them into an oven safe dish or baking sheet lined with parchment paper or aluminum foil sprayed with non-stick cooking spray if desired for easy clean up later on. Bake for 15-20 minutes or until heated through and bubbly on top then serve warm with extra Parmesan cheese if desired!
