Ingredients:

1 boneless skinless chicken breast (100g)
1 cup broccoli florets (100g)
½ cup sliced mushrooms (50g)
½ cup diced onion (50g)
2 cloves garlic, minced (10g)
2 tablespoons olive oil (30ml)
¼ cup white wine (60ml)
½ cup heavy cream (120ml)
¼ cup grated Parmesan cheese (25g)

Cooking Instructions:

Preheat oven to 375°F/190°C.
Heat olive oil in a large skillet over medium heat. Add chicken breast and cook for 5 minutes on each side until golden brown and cooked through. Remove from heat and set aside.
In the same skillet, add broccoli florets, mushrooms, onion and garlic. Cook for 5 minutes until vegetables are tender. Add white wine and cook for an additional 2 minutes until liquid is reduced by half.
Add heavy cream to the skillet and bring to a simmer over medium heat. Simmer for 3 minutes until sauce thickens slightly then remove from heat. Stir in Parmesan cheese until melted then add cooked chicken back into the skillet and stir to combine all ingredients together.
Transfer mixture into an oven-safe dish then bake in preheated oven for 15 minutes or until bubbly around the edges of the dish. Serve warm with your favorite side dishes or salad!
