Ingredients:

1 boneless chicken breast, cut into cubes
2 tablespoons olive oil
1/2 onion, diced
2 cloves garlic, minced
100g mushrooms, sliced
1 tablespoon tomato paste
1/4 cup white wine
1/2 cup chicken broth
2 tablespoons sour cream
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large skillet over medium heat. Add the chicken cubes and cook until lightly browned on all sides. Remove from the skillet and set aside.
Add the onion and garlic to the skillet and cook until softened. Add the mushrooms and cook for an additional 3 minutes. Stir in the tomato paste until combined. Pour in the white wine and chicken broth and bring to a simmer. Return the chicken to the skillet and simmer for 10 minutes or until cooked through.
Reduce heat to low and stir in sour cream until combined. Season with salt and pepper to taste before serving over cooked egg noodles or mashed potatoes. Enjoy!
