Ingredients:

30g butter
1 small onion, finely chopped
2 cloves garlic, minced
150g mushrooms, sliced
100g arborio rice
250ml chicken stock
50ml white wine
50g cooked chicken breast, diced
2 tablespoons freshly grated Parmesan cheese

Cooking Instructions:

Heat the butter in a large saucepan over medium heat. Add the onion and garlic and cook until softened. Add the mushrooms and cook for a further 5 minutes.
Add the rice to the pan and stir to coat in the butter mixture. Pour in the chicken stock and white wine and bring to a simmer. Cook for 15-20 minutes until all of the liquid has been absorbed by the rice.
Stir through the cooked chicken breast and Parmesan cheese until combined. Serve immediately with extra Parmesan cheese if desired.
