Ingredients:

2 tablespoons olive oil
1/2 cup diced onion
1/2 cup diced mushrooms
1/2 cup cooked chicken, shredded or diced
2 tablespoons tomato paste
1/4 teaspoon garlic powder
1/4 teaspoon dried oregano leaves
Salt and pepper to taste
4 lasagna noodles, cooked according to package instructions
1/2 cup ricotta cheese
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley

Cooking Instructions:

Preheat oven to 375°F (190°C). Grease an 8×8 inch baking dish with cooking spray.
Heat the olive oil in a large skillet over medium heat. Add the onion and mushrooms and cook until softened, about 5 minutes. Add the chicken, tomato paste, garlic powder, oregano leaves, salt and pepper and cook for another 3 minutes. Remove from heat and set aside.
Spread half of the chicken mixture in the bottom of the prepared baking dish. Top with two of the lasagna noodles followed by half of the ricotta cheese and half of the Parmesan cheese. Repeat layers with remaining ingredients ending with Parmesan cheese on top. Cover with foil and bake for 30 minutes or until heated through. Uncover and bake for an additional 15 minutes or until golden brown on top. Let cool for 10 minutes before serving. Sprinkle with parsley before serving if desired.
