Ingredients:

1 cup cooked chicken, shredded or diced
1 cup chicken broth or stock
½ cup carrots, diced
½ cup celery, diced
¼ cup onion, diced
2 tablespoons butter or olive oil
2 tablespoons all
purpose flour
¼ teaspoon garlic powder
¼ teaspoon dried thyme
Salt and pepper to taste
2 tablespoons parsley, chopped (optional) For the dumplings:
½ cup all
purpose flour
¼ teaspoon baking powder
Pinch of salt
2 tablespoons butter or olive oil
3 tablespoons cold water

Cooking Instructions:

Heat the butter or olive oil in a large pot over medium heat. Add the onion, carrots and celery and cook for 5 minutes until softened.
Add the garlic powder and thyme and cook for another minute.
Sprinkle the flour over the vegetables and stir to combine. Cook for another minute until the flour is lightly browned.
Pour in the chicken broth or stock and stir to combine. Bring to a boil then reduce heat to low and simmer for 10 minutes until thickened slightly.
Add the cooked chicken to the pot and season with salt and pepper to taste. Simmer for another 5 minutes until heated through.
To make the dumplings, whisk together the flour, baking powder and salt in a medium bowl. Cut in the butter or olive oil with a pastry blender or two knives until it resembles coarse crumbs. Stir in enough cold water to form a soft dough (you may not need all of it).
Drop spoonfuls of dough into the soup mixture and simmer for 10 minutes until dumplings are cooked through (they should be light and fluffy).
Garnish with parsley if desired before serving hot!
