Ingredients:

60g Penne pasta
1/2 tsp olive oil
1/2 small onion, diced
1 garlic clove, minced
1/4 tsp smoked paprika
1/4 tsp cayenne pepper
1/4 tsp dried oregano
120g chicken breast, diced
2 tbsp tomato paste
120ml chicken stock
2 tbsp cream cheese

Cooking Instructions:

Bring a pot of salted water to a boil and cook the penne pasta according to package instructions. Drain and set aside.
Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 3 minutes.
Add the smoked paprika, cayenne pepper and oregano and stir to combine. Add the chicken pieces and cook until golden brown on all sides, about 5 minutes.
Add the tomato paste and chicken stock and bring to a simmer. Simmer for 5 minutes or until the sauce has thickened slightly.
Stir in the cream cheese until melted into the sauce then add the cooked pasta to the skillet and toss everything together until combined. Serve immediately with your favorite sides!
