Ingredients:

150g lean ground beef
1 small onion, diced
1 carrot, diced
1 celery stalk, diced
2 cloves garlic, minced
1 teaspoon olive oil
2 cups beef broth or stock
½ cup canned tomatoes, diced
½ teaspoon dried oregano
½ teaspoon dried basil
¼ teaspoon black pepper
¼ teaspoon salt

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the ground beef and cook until browned. Drain off any excess fat.
Add the onion, carrot, celery and garlic to the pot and cook for 5 minutes until softened.
Pour in the beef broth or stock and bring to a boil. Reduce heat to low and add the tomatoes, oregano, basil, black pepper and salt. Simmer for 15 minutes until vegetables are tender.
Serve hot with crusty bread or crackers if desired. Enjoy!
