Ingredients:

120g beef stew meat, cubed
1 small sweet potato, peeled and cubed
1/2 onion, diced
2 cloves garlic, minced
1/2 teaspoon dried thyme leaves
1/2 teaspoon dried oregano leaves
1/4 teaspoon ground black pepper
2 tablespoons tomato paste
1 cup beef broth
2 tablespoons Worcestershire sauce

Cooking Instructions:

Heat a large pot over medium-high heat. Add the beef cubes and cook until browned on all sides. Remove from the pot and set aside.
Add the sweet potato cubes to the pot and cook for 5 minutes or until lightly browned. Add the onion and garlic to the pot and cook for another 3 minutes or until softened.
Return the beef to the pot along with the thyme, oregano, black pepper, tomato paste, beef broth, and Worcestershire sauce. Stir to combine all ingredients then bring to a boil. Reduce heat to low then cover with a lid and simmer for 40 minutes or until beef is tender.
Serve hot with your favorite side dish or over cooked rice or noodles if desired. Enjoy!
