Ingredients:

120g lean ground beef
1/2 cup diced onion
1/2 cup diced celery
1/2 cup diced carrots
2 cloves garlic, minced
1 teaspoon dried oregano leaves
1 teaspoon dried thyme leaves
1/4 teaspoon ground black pepper
2 cups cubed butternut squash
2 tablespoons tomato paste
1/2 cup beef broth
2 tablespoons chopped fresh parsley
Salt to taste
2 tablespoons grated Parmesan cheese (optional)

Cooking Instructions:

Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish with cooking spray.
In a large skillet over medium heat, cook the ground beef until browned. Add the onion, celery, carrots and garlic and cook for 5 minutes or until vegetables are softened. Stir in the oregano, thyme and pepper.
Add the squash cubes to the skillet and stir to combine. Cook for 3 minutes or until squash is slightly softened. Stir in the tomato paste and beef broth and bring to a simmer. Simmer for 5 minutes or until liquid is reduced by half. Remove from heat and stir in parsley. Season with salt to taste if desired.
Transfer mixture to prepared baking dish and sprinkle with Parmesan cheese if desired. Bake for 30-35 minutes or until squash is tender when pierced with a fork. Serve hot!
