Ingredients:

150g beef mince
1 large parsnip, peeled and diced into small cubes
1 onion, diced
2 cloves garlic, minced
1 teaspoon dried thyme leaves
1 teaspoon smoked paprika powder
½ teaspoon ground black pepper
2 tablespoons tomato paste
250ml beef stock

Cooking Instructions:

Heat a large saucepan over medium heat and add the beef mince. Cook for 5 minutes until browned.
Add the diced parsnip, onion, garlic, thyme leaves, smoked paprika powder and ground black pepper to the pan and cook for a further 5 minutes until the vegetables are softened.
Stir in the tomato paste and beef stock and bring to a simmer. Reduce the heat to low and simmer for 30 minutes until the stew has thickened slightly.
Serve with crusty bread or mashed potatoes for a comforting meal!
