Ingredients:

120g lean beef steak, cut into thin strips
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
100g mushrooms, sliced
1 teaspoon paprika powder
½ teaspoon dried thyme leaves
¼ cup beef stock or broth
2 tablespoons sour cream or Greek yogurt
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large skillet over medium-high heat. Add the beef strips and cook for 3-4 minutes until lightly browned. Remove from the pan and set aside.
Add the onion and garlic to the same skillet and cook for 2-3 minutes until softened. Add the mushrooms and cook for another 3-4 minutes until golden brown.
Return the beef strips to the skillet along with the paprika powder, thyme leaves, beef stock or broth, salt and pepper to taste. Simmer for 5 minutes until the sauce has thickened slightly.
Remove from heat and stir in the sour cream or Greek yogurt until combined. Serve hot over cooked egg noodles or mashed potatoes if desired.
