Ingredients:

150g beef mince
1 onion, diced
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon smoked paprika
½ teaspoon ground coriander
½ teaspoon dried oregano
2 tablespoons tomato paste
200ml beef stock or water
100g green lentils
2 carrots, diced
2 celery stalks, diced

Cooking Instructions:

Heat a large saucepan over medium heat. Add the beef mince and cook until browned. Remove from the pan and set aside.
Add the onion to the pan and cook for 5 minutes until softened. Add the garlic, cumin, paprika, coriander and oregano and cook for a further minute.
Return the beef mince to the pan along with the tomato paste and stir to combine. Pour in the stock or water and bring to a simmer.
Add the lentils, carrots and celery to the pan and stir to combine. Reduce heat to low-medium and simmer for 30 minutes or until lentils are cooked through. Stir occasionally during cooking time if needed.
