Ingredients:

150g lean beef mince
1 leek, sliced into thin rounds
1 large potato, peeled and diced into small cubes
2 cloves garlic, minced
1/2 teaspoon dried thyme leaves
1/2 teaspoon smoked paprika powder
2 tablespoons tomato paste
1/2 cup beef stock or water
Salt and pepper to taste

Cooking Instructions:

Preheat the oven to 350°F (175°C).
Heat a large skillet over medium heat. Add the beef mince and cook until browned. Add the leeks, potatoes, garlic, thyme leaves, smoked paprika powder and tomato paste. Cook for 5 minutes until the vegetables are softened.
Pour in the beef stock or water and season with salt and pepper to taste. Bring to a simmer then transfer the mixture to an ovenproof dish. Cover with foil then bake in the preheated oven for 30 minutes or until the potatoes are cooked through.
Serve hot with your favorite side dishes such as mashed potatoes or steamed vegetables. Enjoy!
