Ingredients:

100g lean beef mince
1/2 cup diced onion
1/2 cup diced celery
1/2 cup diced carrots
1/4 head of cabbage, shredded or chopped into small pieces
2 cloves garlic, minced
2 tablespoons tomato paste
2 cups beef stock
1 teaspoon dried oregano
Salt and pepper to taste

Cooking Instructions:

Heat a large pot over medium heat. Add the beef mince and cook until browned. Drain off any excess fat.
Add the onion, celery, carrots, cabbage, garlic and tomato paste to the pot. Cook for 5 minutes until vegetables are softened.
Pour in the beef stock and add the oregano. Bring to a boil then reduce heat to low and simmer for 20 minutes or until vegetables are tender. Season with salt and pepper to taste.
Serve hot with crusty bread or mashed potatoes if desired.
