Ingredients:

2 cups vegetable broth
1/2 cup diced carrots
1/2 cup diced celery
1/4 cup diced onion
2 cloves garlic, minced
2 tablespoons soy sauce or tamari sauce (gluten
free)
2 tablespoons rice vinegar
1 teaspoon freshly grated ginger root
6 wonton wrappers

Cooking Instructions:

In a medium pot over medium heat, add the vegetable broth, carrots, celery, onion, garlic, soy sauce or tamari sauce (gluten-free), rice vinegar and ginger root. Bring to a boil and reduce heat to low. Simmer for 10 minutes.
Meanwhile, prepare the wontons by laying out 6 wonton wrappers on a clean surface. Place about 1 teaspoon of filling in the center of each wrapper. Wet the edges of the wrapper with water and fold in half to form a triangle shape. Press down firmly on the edges to seal them shut. Repeat with remaining wrappers and filling until all are filled and sealed.
Once the soup has simmered for 10 minutes, add the prepared wontons to the pot and simmer for an additional 10 minutes until cooked through.
