Ingredients:

1 onion, diced
2 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
1 red bell pepper, diced
1 zucchini, diced
2 cups vegetable broth
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
Salt and pepper to taste

Cooking Instructions:

Heat a large pot over medium heat. Add the onion and garlic and cook until softened (about 5 minutes).
Add the carrots, celery, bell pepper and zucchini to the pot. Cook for another 5 minutes until vegetables are softened.
Pour in the vegetable broth and bring to a boil. Reduce heat to low and add oregano, basil, salt and pepper. Simmer for 15 minutes until vegetables are tender.
Serve hot with crusty bread or crackers if desired. Enjoy!
