Ingredients:

2 cups of vegetable broth
2 cups of diced tomatoes (canned or fresh)
1/2 cup of diced onion
1/2 cup of diced celery
1/4 cup of diced carrots
2 cloves of garlic, minced
1 teaspoon of dried oregano
1 teaspoon of dried basil
Salt and pepper to taste

Cooking Instructions:

In a large pot over medium heat, add the vegetable broth, tomatoes, onion, celery, carrots, garlic, oregano and basil. Bring to a boil.
Reduce the heat to low and simmer for 15 minutes or until the vegetables are tender.
Using an immersion blender or food processor blend the soup until smooth. If desired add salt and pepper to taste.
Serve hot with your favorite toppings such as croutons or vegan cheese shreds. Enjoy!
