Ingredients:

200g firm tofu, cubed
1 onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
2 carrots, diced
2 stalks celery, diced
1 teaspoon fresh ginger root, grated
4 cups vegetable broth
2 tablespoons soy sauce
1 teaspoon sesame oil

Cooking Instructions:

Heat a large pot over medium heat. Add the onion and garlic and cook for 3 minutes until softened.
Add the bell pepper, carrots, celery and ginger root and cook for another 5 minutes until vegetables are softened.
Add the vegetable broth and bring to a boil. Reduce heat to low and simmer for 10 minutes.
Add the cubed tofu and soy sauce to the pot and simmer for another 5 minutes until heated through.
Remove from heat and stir in sesame oil before serving.
