Ingredients:

2 cups vegetable broth
1 large sweet potato, peeled and diced into small cubes
1/2 cup diced onion
1/2 cup diced celery
1/2 cup diced carrots
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon smoked paprika
Salt and pepper to taste

Cooking Instructions:

In a large pot over medium heat, add the vegetable broth. Bring to a simmer.
Add the sweet potato cubes, onion, celery, carrots and garlic to the pot. Stir to combine.
Add the cumin and smoked paprika to the pot and stir to combine. Simmer for 15 minutes or until the vegetables are tender.
Using an immersion blender or regular blender, blend the soup until smooth. Season with salt and pepper to taste. Serve warm.
