Ingredients:

8 jumbo pasta shells
1/2 cup cooked quinoa
1/4 cup chopped onion
1/4 cup chopped bell pepper
1/4 cup diced tomatoes
2 tablespoons tomato paste
2 tablespoons nutritional yeast flakes
1 teaspoon garlic powder
1 teaspoon dried oregano
Salt and pepper to taste

Cooking Instructions:

Preheat oven to 375°F (190°C).
Cook the pasta shells according to package instructions. Drain and set aside.
In a medium bowl, combine the cooked quinoa, onion, bell pepper, tomatoes, tomato paste, nutritional yeast flakes, garlic powder, oregano, salt and pepper. Mix until well combined.
Stuff each shell with the quinoa mixture and place in an oven-safe dish. Bake for 25 minutes or until golden brown on top.
Serve warm and enjoy!
