Ingredients:

1 cup ricotta cheese
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh parsley leaves
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
8 manicotti shells, cooked according to package instructions and cooled slightly
2 cups marinara sauce, divided
2 tablespoons chopped fresh basil leaves
2 tablespoons grated Parmesan cheese (optional)

Cooking Instructions:

Preheat oven to 375°F. Grease a 9×13-inch baking dish with nonstick cooking spray.
In a medium bowl, combine ricotta cheese, Parmesan cheese, parsley, garlic, salt and pepper until well blended. Spoon the mixture into the manicotti shells and place them in the prepared baking dish. Pour 1 cup of marinara sauce over the top of the manicotti shells. Cover with foil and bake for 30 minutes.
Remove foil and pour remaining marinara sauce over the top of the manicotti shells. Sprinkle with basil and Parmesan cheese (if using). Bake for an additional 10 minutes or until heated through and bubbly around the edges. Serve hot.
