Ingredients:

200g shrimp (peeled and deveined)
1 onion (diced)
2 cloves garlic (minced)
2 tablespoons tomato paste
1 teaspoon paprika
1 teaspoon dried oregano
1 teaspoon dried thyme leaves
500ml vegetable stock or broth
250ml coconut milk or cream
Salt and pepper to taste

Cooking Instructions:

Heat a large pot over medium heat. Add the diced onion and cook until softened, about 5 minutes.
Add the minced garlic and cook for another minute.
Add the tomato paste, paprika, oregano, thyme leaves, vegetable stock or broth, coconut milk or cream and stir to combine. Bring to a boil then reduce heat to low and simmer for 15 minutes.
Add the shrimp to the pot and cook until they are cooked through, about 5 minutes.
Season with salt and pepper to taste then remove from heat. Serve hot with crusty bread or crackers if desired.
