Ingredients:

2 medium potatoes (400g), peeled and diced into small cubes
1 large leek (200g), washed and sliced into thin rings
2 cloves garlic (10g), minced
1 teaspoon dried thyme leaves (2g)
1 teaspoon sea salt (5g)
¼ teaspoon ground black pepper (1g)
2 cups vegetable broth or stock (500ml)

Cooking Instructions:

In a large pot over medium heat, add the potatoes, leek, garlic, thyme leaves, salt and pepper. Stir to combine.
Pour in the vegetable broth or stock and bring to a boil. Reduce the heat to low and simmer for 20 minutes or until the potatoes are tender.
Using an immersion blender or regular blender, blend the soup until smooth. Taste and adjust seasoning if needed.
