Ingredients:

1/2 cup dry rice noodles
2 cups vegetable broth
1/2 cup mushrooms, sliced
1/4 cup carrots, shredded or julienned
1/4 cup onion, diced
2 cloves garlic, minced
2 tablespoons soy sauce or tamari sauce
1 teaspoon fresh ginger, grated
1 teaspoon fresh lime juice
Salt and pepper to taste

Cooking Instructions:

Bring a pot of water to a boil over high heat. Add the rice noodles and cook for 5 minutes until al dente. Drain and set aside.
In a large pot over medium heat, add the vegetable broth and bring to a simmer. Add the mushrooms, carrots, onion, garlic, soy sauce or tamari sauce, ginger and lime juice. Simmer for 10 minutes until vegetables are tender.
Add the cooked noodles to the pot and simmer for an additional 5 minutes until heated through. Season with salt and pepper to taste.
Serve hot in individual bowls with your favorite toppings such as fresh herbs or chili peppers if desired. Enjoy!
