Ingredients:

1 onion, diced
2 cloves garlic, minced
2 carrots, diced
1 celery stalk, diced
1 zucchini, diced
1 can (400 g) chopped tomatoes
2 cups vegetable broth
½ cup red kidney beans
½ cup green beans
½ cup cooked pasta (e.g. macaroni)
2 tablespoons fresh parsley leaves, chopped

Cooking Instructions:

Heat a large pot over medium heat. Add the onion and garlic and cook for 3 minutes until softened.
Add the carrots, celery and zucchini to the pot and cook for another 5 minutes until softened.
Add the chopped tomatoes, vegetable broth and beans to the pot and bring to a boil. Reduce heat to low and simmer for 15 minutes until vegetables are tender.
Add the cooked pasta to the soup and simmer for another 5 minutes until heated through.
Stir in the parsley leaves before serving hot with crusty bread or crackers if desired. Enjoy!
