Ingredients:

150g linguine pasta
100g scallops
2 cloves garlic, minced
1/2 teaspoon dried oregano
1/4 teaspoon red pepper flakes (optional)
2 tablespoons white wine or vegetable broth
2 tablespoons freshly squeezed lemon juice
2 tablespoons chopped fresh parsley leaves

Cooking Instructions:

Bring a large pot of salted water to a boil over high heat. Add the linguine and cook according to package instructions until al dente. Drain and set aside.
Heat a large non-stick skillet over medium heat. Add the scallops and cook for about 3 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
In the same skillet, add the garlic, oregano, red pepper flakes (if using), white wine or vegetable broth, and lemon juice. Cook for about 1 minute until fragrant.
Add the cooked linguine to the skillet and toss to combine with the sauce ingredients. Cook for about 1 minute until heated through.
Add the cooked scallops back into the skillet and toss to combine with the sauce ingredients again. Cook for another minute until heated through again.
Serve immediately topped with freshly chopped parsley leaves if desired! Enjoy!
