Ingredients:

1/2 cup diced cucumber
1/2 cup diced red bell pepper
1/4 cup diced red onion
2 cloves garlic, minced
2 tablespoons freshly squeezed lemon juice
2 tablespoons freshly chopped parsley leaves
1/4 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
2 cups vegetable broth or water

Cooking Instructions:

In a blender, combine the cucumber, bell pepper, onion, garlic, lemon juice, parsley leaves, sea salt and black pepper. Blend until smooth.
Add the vegetable broth or water and blend until combined.
Pour the gazpacho into a bowl and serve chilled. Enjoy!
