Ingredients:

1 onion, diced
2 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
1 cup vegetable broth or stock
1/2 teaspoon dried oregano
1/4 teaspoon dried thyme leaves
1/4 teaspoon black pepper
2 cups water
1/2 pound white fish fillets (such as cod or haddock), cut into cubes
2 tablespoons fresh parsley, chopped

Cooking Instructions:

In a large pot over medium heat, sauté the onion and garlic until softened.
Add the carrots and celery and cook for another 5 minutes.
Pour in the vegetable broth or stock and add the oregano, thyme leaves and black pepper. Bring to a boil then reduce heat to low and simmer for 10 minutes.
Add the water and fish cubes to the pot and simmer for another 5 minutes until the fish is cooked through.
Remove from heat and stir in the fresh parsley before serving.
