Ingredients:

2 large potatoes, peeled and diced into small cubes
1 onion, diced
2 cloves garlic, minced
1 teaspoon dried thyme leaves
4 cups vegetable broth or stock
1/2 cup unsweetened almond milk or other non
dairy milk of choice
Salt and pepper to taste

Cooking Instructions:

In a large pot over medium heat, add the potatoes, onion, garlic and thyme. Sauté for 5 minutes until the vegetables are softened.
Add the vegetable broth or stock to the pot and bring to a boil. Reduce heat to low and simmer for 25 minutes until the potatoes are tender.
Remove from heat and use an immersion blender to blend the soup until creamy. Alternatively you can transfer the soup in batches to a blender or food processor and blend until smooth.
Return the soup to the pot over low heat and stir in the almond milk or other non-dairy milk of choice until combined. Season with salt and pepper to taste if desired. Simmer for an additional 10 minutes before serving hot with your favorite toppings such as fresh herbs or croutons if desired. Enjoy!
