Ingredients:

2 cups vegetable broth
1 cup mushrooms, sliced
1/2 cup onion, diced
1/4 cup celery, diced
2 cloves garlic, minced
1/4 teaspoon dried thyme
1/4 teaspoon black pepper
2 tablespoons all
purpose flour
1/2 cup unsweetened almond milk

Cooking Instructions:

In a large pot over medium heat, add the vegetable broth, mushrooms, onion, celery and garlic. Simmer for 10 minutes.
Add the thyme and black pepper and stir to combine. Simmer for an additional 5 minutes.
In a small bowl whisk together the flour and almond milk until smooth. Slowly add the mixture to the pot while stirring continuously until combined. Simmer for an additional 5 minutes or until thickened.
Serve warm with your favorite toppings such as fresh herbs or croutons!
