Ingredients:

1/2 cup mushrooms, chopped
1/4 cup onion, chopped
2 cloves garlic, minced
2 tablespoons all
purpose flour
2 cups vegetable broth
1/2 cup cream or non
dairy milk
Salt and pepper to taste

Cooking Instructions:

In a large pot over medium heat, sauté the mushrooms, onion and garlic until softened.
Add the flour and stir until combined. Cook for 1 minute.
Slowly add the vegetable broth while stirring constantly to avoid lumps. Bring to a boil then reduce heat to low and simmer for 10 minutes.
Add the cream or non-dairy milk and stir until combined. Simmer for an additional 5 minutes or until desired thickness is reached. Season with salt and pepper to taste. Serve warm.
