Ingredients:

2 leeks, chopped
1 onion, chopped
2 cloves garlic, minced
2 cups vegetable broth
1 cup almond milk
1 teaspoon dried thyme
Salt and pepper to taste

Cooking Instructions:

In a large pot over medium heat, sauté the leeks, onion and garlic for 5 minutes until softened.
Add the vegetable broth and bring to a boil. Reduce heat to low and simmer for 15 minutes.
Add the almond milk and thyme and simmer for an additional 5 minutes.
Remove from heat and season with salt and pepper to taste. Blend with an immersion blender until smooth. Serve warm.
